Gavin's Thanksgiving Recipes

Cranberry Mustarda
2 lbs cranberries
1 liberal pour of Loose Boots Session IPA
1 cup red wine Vinegar
3/4 cup toasted mustard seed
1 apple or pear dice
1 onion diced
1 tablespoon ginger chopped
1 cup sugar
1/2 cup honey
2 bay leaves
1 orange zested
2 cups water
salt and pepper to taste
Mix all ingredients in a medium sized pot and cook on the stove over medium heat for 15 - 20 minutes, or until everything is broken down. Add salt and pepper, serve at room temperature.

Andouille Cornbread Stuffing
1 lb bovine & Swine andouille sausage, diced
1 yellow onion diced
5 stalks of celery diced
1 poblano pepper diced
1/4 lb butter
1 tablespoon garlic
Sauté all above ingredients in a pan with Family Vacation Blonde Ale and add to:
6 cups day old white bread diced
6 cups day old cornbread diced
1/4 cup fresh chopped thyme
2 eggs
4 cups chicken stock
Bake at 350 degrees for 20-30 minutes, or until done

Roasted Butternut Squash Salad
Combine:
3lbs butternut squash, diced and roasted (bake squash at 350 degrees for 20 minutes)
salt+ pepper
olive oil
2 tablespoons brown sugar
Vinegar:
1 1/2 cup apple cider
4 tablespoons apple cider vinegar
4 tablespoons fresh shallots
4 tablespoons dijon mustard
1 tablespoon thyme
salt+pepper
Salad:
Toss arugula with squash
1 cup toasted walnuts
1 lb warm Bovine & Swine Black and Blue, diced
Finish with pecorino
Warm the vinegar and toss all ingredients together
